Salmon

Salmon are threatened in the Pacific Northwest by acid rain and industrial development. In response the environmental movement has pushed endangered species status of certain kinds of salmon. However, big business has a powerful lobby in Washington and little progress has been made on this front.

Fortunately for gourmets who consider salmon a delicacy salmon can also be raised on farms. It is served in many ways: smoked salmon can be found with cream cheese on top of a bagel or cracker. It can be found at national restaurant chains, New York delis and the poshest dinner parties.

There are many ways to cook salmon. It is a popular grilled item in the summer. Also, it can be poached with some white wine, onion and fresh dill. Add a side dish of vegetables, drizzle with fresh lemon, and voilà-dinner is served.
