Fresh Fish
A fish market with the best fresh fish is usually a well-kept
secret. However, if you look in the "Best of" sections of
review guides you may get some inside tips. Also, ask friends and a
friendly waiter and you may get pointed in the right direction.
Once you're at the local market you need to know how to spot a truly
fresh fish. First check out the fish's eyes. If they are a cloudy the
fish was likely harvested at least five days ago and you should move
on.
Also, when looking for fresh fish check out the interior gills. You
don't want to see any pink or brownish gray because this suggests the
fish was mishandled or is getting old. Finally, the nose knows: if you
smell any offensive odors come back on another day when the fish delivery
is fresher.
