There are many labels for crab at the store but it all boils down to a few different kinds. You're purchasing either lump, special, claw or crab fingers. If you're cooking a gourmet meal, choose lump which has white body need and is the most rare of finds.

If you have to store the crab meat, keep in mind that fresh seafood needs to be well iced. Locate the coldest spot in your refrigerator and set a refrigerator below 40°F. Fresh picked crabmeat can be stored for 10 to 12 days from the date of packaging. However, once it's in your home try to use it within a few days. This will help you preserve the exquisite and delicate flavor.
